Red Velvet Peanut Butter Blossoms
Did you know the Peanut Butter Blossom was invented in Ohio? In fact, it’s roots go back to my very own hometown, Gibsonburg, Ohio. The peanut butter blossoms were entered into the 1957 Pillsbury baking contest. Though they didn’t win (third place nationally), these cookies stood the test of time and are now beloved everywhere. Peanut butter blossoms are one of my favorite cookies, especially around the holidays. So finding out they originated in my hometown propelled them to the top of my baking list.

Buckeye Brownies
Buckeye football is back! Which means all things chocolate and peanut butter are in order. Rather than pull out an old favorite, I wanted to come up with something new and fun. So Matt and I put our heads together to brainstorm. Turns out our heads were going in the same direction – Buckeye Brownies. But not the standard, “add peanut butter frosting on top of brownies.” We decided we wanted a brownie that LOOKS like a Buckeye too!

Love is sharing an ooey-gooey skillet brownie with your very best friend. Fresh out of the oven, piping hot and covered in rich vanilla ice cream, it’s the perfect dessert to fight over with two spoons. Or keep it all to yourself – you’ll find no judgement here. This skillet brownie comes together in 5 minutes, is out of the oven in 20, and will be devoured in less than 2.

Banana Bread Oatmeal Chocolate Chip Cookies
You can only bake banana bread so many times before you need a change. With yet another set of ripe bananas ready for baking, but tired of endless loaves of banana bread, I decided it was time for a something new. So, I started thinking – how else can I use my ripe bananas? Not muffins, those are just convenient bread slices. But… how about what I do best – cookies!

Banana bread. It is certainly getting lots of attention as one of the best baking treats of 2020. And why shouldn’t it? Heaven knows we all have aging bananas laying around. And when those sad products can be transformed into the magical goodie that is banana bread – it’s a no brainer.

Double Chocolate Espresso Zucchini Bread
Would all the chocolate lovers please stand up? If you now find yourself standing, this zucchini bread is probably for you. Even more so if you’re also a coffee lover (which I’m not, but Matt is and this bread is right up his alley). Double chocolate espresso zucchini bread is rich in chocolate flavor, enhanced by dark chocolate and espresso chips.

Zucchini Cream Cheese Muffins
It’s zucchini season! The biggest downside of living in a city-based apartment is the lack of land to plant a garden. It’s on my list when we get a house! Thankfully, my parents had an abundance of zucchini this year and brought 4 huge zucchini when they visited this month – which meant I needed a new recipe and fast.

Apple Crumble Muffins
It’s only after you purchase 50 pounds of fresh peaches that you discover your husband is not the biggest peach fan… But he’s been a great sport in trying everything I baked. After baking up a batch of Peach Crumble Muffins (recipe here), Matt determined that they were good – but they’d be much better as apple crumble muffins. Since he’s been such a good sport with the peach recipes, I decided to try apple crumble muffins just for him.
