Always on the look out for semi-healthy breakfast treats for Matt, I was super excited to find Peach Crumble Muffins from Sally’s Baking Addiction. These muffins come together fast and are a great grab-and-go breakfast, or evening dessert. Full of peach flavor and topped with dark brown sugar crumble, you’ll fall in love with these muffins!

Banana Blueberry Muffins
Banana bread: it’s THE baking item of COVID-19. And for good reason. Putting aside the amazing comfort vibes banana bread gives, this treat is extremely versatile, pairs well with other fruits, and it just fun to make. And if you’re anything like me, you probably have a ripe banana or two laying around just screaming to be made into bread. Or in this case, muffins!

Bourbon Brioche French Toast
It’s no secret that I have an absolute love for all things bourbon. Whenever possible, I work bourbon into the treats I make - just to experience that amazing warmth and comfort bourbon flavors bring to mind. My love affair with bourbon began in 2017, when Matt and I made our first trip to Bardstown, Kentucky - the heart of Bourbon Country. From the amazing hospitality to the gorgeous scenery, I think I a little piece of my heart permanently resides in the great state of Kentucky.

Cheesecake Brownies
If there’s two desserts Matt loves most in this world, they’d be cheesecake and brownies. Probably one of his favorite things is fresh, ooey gooey brownies straight out of the oven - although he respects my insistence that baked goods need at least 2-3 minutes to cool and set up before he digs in. Last weekend, I mused aloud about a brownie bottomed cheesecake. Matt, of course, perked right up at the thought. Originally planned as a weekend bake, I surprised Matt with these on a weeknight as a pick-me-up after an unexpectedly crazy and stressful week.

Lemon Blueberry Upside Down Cupcakes
When the spring weather rolls around, I find myself craving light and bright flavors; namely, fruits! Lemon is a go-to spring flavor for me, the bright citrus is the epitome of spring! I’ve adapted this Lemon Berry Yogurt Cake recipe from Sally’s Baking Addiction before, the first time into a 9x13 cake pan. For this bake, I wanted to make a cupcake version - pre-portioned sizes to pack in Matt’s lunches!

The cookie that started it all! I’ve been baking chocolate chip cookies for as long as I can remember. To my friends and family, they’re a staple of my baking repertoire. As my baking skills have increase, my recipe has continued to evolve as I search for the exact cookie profile I desire: soft, chewy, and filled with ooey gooey chocolate chips.
