Actually, that’s a lie, I’m always in the mood for sweet potatoes – fall just makes it more acceptable as they’re one of the best foods of the season. With my recent sweet potato pie cupcakes, I was looking for other ways to incorporate one of my favorite foodstuffs into desserts.

It’s zucchini season! The biggest downside of living in a city-based apartment is the lack of land to plant a garden. It’s on my list when we get a house! Thankfully, my parents had an abundance of zucchini this year and brought 4 huge zucchini when they visited this month – which meant I needed a new recipe and fast.

It’s only after you purchase 50 pounds of fresh peaches that you discover your husband is not the biggest peach fan… But he’s been a great sport in trying everything I baked. After baking up a batch of Peach Crumble Muffins (recipe here), Matt determined that they were good – but they’d be much better as apple crumble muffins. Since he’s been such a good sport with the peach recipes, I decided to try apple crumble muffins just for him.

These muffins come together fast and are a great grab-and-go breakfast, or evening dessert. Full of peach flavor and topped with dark brown sugar crumble, you’ll fall in love with these muffins!

Banana bread: it’s THE baking item of COVID-19. And for good reason. Putting aside the amazing comfort vibes banana bread gives, this treat is extremely versatile, pairs well with other fruits, and it just fun to make. And if you’re anything like me, you probably have a ripe banana or two laying around just screaming to be made into bread. Or in this case, muffins!
